My food philosophy is based on bringing the best out of the highest quality ingredients available. For me, that means sourcing the finest local produce from trusted suppliers. Working with seasonal ingredients to create sustainable, delicious menus throughout the year and crafting dishes that are sympathetically prepared, with respect for ingredients, provenance and value
