A destination dining experience

Atmosphere, service and attention-to-detail, combined to deliver a destination dining experience, from a light lunch to an evening meal. I believe that to create the perfect plate, a chef’s passion for food should extend beyond his kitchen. And from a salad in summer to a slow-cooked stew in the winter, me and the team take care to ensure our guests consistently enjoy the best food in the region.

My food philosophy is based on bringing the best out of the highest quality ingredients available. For me, that means sourcing the finest local produce from trusted suppliers. Working with seasonal ingredients to create sustainable, delicious menus throughout the year and crafting dishes that are sympathetically prepared, with respect for ingredients, provenance and value

We enjoy long-standing relationships with some of the region’s best suppliers of fresh fruit and vegetables, prime cuts of meat and other local specialities. Because some items, such as fresh fish, vary in availability, we create exciting specials boards that showcase our favourite current ingredients and complement our longer-term seasonal menus. Local knowledge and experience help us source the best in both quality and value, right on our doorstep, to create food our guests love, all year round.

I’m always excited to work with the best – produce, suppliers, kitchen staff and front-of-house team. That’s what PRIME at Stirk House is all about.
